1 medium zucchini
2 eggs
1 tablespoon wheat flour (can be replaced with whole wheat or oat flour)
Salt and pepper to taste
Chopped spring onions to taste
2-3 slices of cooked ham or turkey breast
2-3 slices of cheese (mozzarella, cheddar or other)

1. Prepare the zucchini.
Grate the zucchini and place it in a bowl. Add a pinch of salt and let it sit for 5 minutes. Squeeze out any excess liquid through a sieve or cheesecloth.
2. Mix the main ingredients.
In a separate bowl, whisk the eggs with salt, pepper, and spices of your choice (granulated garlic, oregano, turmeric, etc.). Add a tablespoon of flour and mix until smooth. 3. Add the zucchini. Add the drained zucchini to the egg-flour mixture and mix well.
4. Fry in a pan:
Heat a non-stick pan with a little oil. Add half of the mixture and spread evenly.
5. Add the filling.
Place the ham and cheese slices on the base and sprinkle with chives.

Pour the remaining mixture over the fish and spread it evenly. Fry over medium heat until the underside is golden brown. Then, using a plate or lid, carefully flip the fish and fry the other side.
7. Serve hot.
Remove from heat and serve immediately. Serve with a fresh salad or brown rice.
